it's your soldering iron's fault 
Cocoa Hoto (real) I spent so long with crappy soldering irons, I am so glad I upgraded finally
problems like OP pic is the iron can't dump enough heat into the area fast enough.
@sun the breadboard might be sinking heat too, try removing it before soldering, I bet that'll help a lot
been tempted to get something like this for the toolbox/travel, saw a EEVBlog vid on something similar
I picked up a used FX-100 on ebay, arrived with the internal transformer disconnected and rattling around 
Luckily nothing was broken and the screws were in there still and it's been working pretty great for a couple years now. The basically instant heat up time and thermal transfer is A+++++ seeing vids of it pooling solder on a penny sold me on it
